Nachos

A bed of lightly salted corn chips/tortillas topped with chopped tomato, red pepper, red onion & avocado, freshly ground black pepper and chilli powder, dotted with houmous topped with a little grated cheese & grilled until cheese starts to melt.

If you chop the tomato, red pepper, red onion and mix with a little fresh lime or lemon juice, extra virgin olive oil, black pepper and chilli powder in advance, after a few hours in the fridge you have a lovely red salsa, a little tomato puree combines it, but this is processed.

I have been known to add chillies, beetroot and radishes to the salsa and spinach to the nachos before the houmous and cheese.
