Muesli Flapjack

1oz/25g Lightly or unsalted butter
2tbsp/30ml Local honey
4oz/100g Rolled oats
8oz/200g Dried fruit, chopped
1oz/25g Nuts, chopped
Handful Seeds

Method

Heat the oven to 180degC. Melt the butter slowly in a fairly large pan. Turn off the heat and add the honey, leave to warm and melt. Combine the other ingredients and add half to the pan, mix then add the rest. You may not believe it at first, but all the oats will get coated and turn golden, when this has happened turn into a lined baking tin (about 6½in x 10½in / 18cm x 27cm) and squash down with the back of a spoon. Put in the oven for about 20 minutes – the edges should be just turning golden brown. Leave to cool in the tin. Turn out, carefully peel off paper and cut with a bread knife, using a sawing action, into 12 squares. It will crumble a little at the edges, if very crumbly either it was not pressed firmly enough into the tray, or the fruit and nuts weren't chopped small enough. But it tastes nice in crumbled pieces or a block!

You can combine different mixes of dried fruit, nuts and seeds, or throw everything in, as I usually do.
